  • 1 tablespoon extra-virgin olive oil
  • 4 chicken breasts, boneless and skinless
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cups baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup parmesan, freshly grated
  • lemon wedges, optional, to taste, for serving

Directions

Step 1 -In a skillet over medium heat, heat the oil.

Step 2 -Add the chicken, the salt, the pepper, and the oregano and cook until the chicken is golden, with the meat reaching an internal temperature of 165 degrees F, about 8 minutes per side.

Step 3 -Transfer the chicken from the skillet and set it aside.

Step 4 -In the same skillet over medium heat, melt the butter.

Step 5 -Stir in the garlic and cook until fragrant, about 1 minute.

Step 6 -Add the cherry tomatoes and season them with the salt and the pepper.

Step 7 -Cook the tomatoes until they begin to burst.

Step 8 -Add the spinach and cook until it begins to wilt, about 2 minutes.

Step 9 -Stir in the heavy cream and the parmesan and bring the mixture to a simmer.

Step 10 -Reduce the heat to low and simmer until the sauce is slightly reduced, about 3 minutes.

Step 11 -Return the chicken to the skillet and cook until heated through, about 5-7 minutes.

Step 12 -Serve with the lemon wedges.
