Ingredients
- 8 large eggs
- 2 cups half-and-half
- 2 (6-ounce) cans crabmeat, drained
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed thoroughly
- 1 cup breadcrumbs
- 1 cup Swiss cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground nutmeg
- 2 celery ribs, chopped
- 1/2 cup onion, chopped
- 1/2 cup sweet red pepper, chopped
- 3 medium fresh mushrooms, chopped
- 2 tablespoons butter
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Grease a shallow 2-1/2-quart baking dish.
Step 3 -In a large bowl, beat the eggs and the half-and-half together.
Step 4 -Stir the crab, the spinach, the breadcrumbs, the Swiss cheese, the salt, the pepper, and the nutmeg into the egg mixture.
Step 5 -In a skillet, add the celery, the onion, the red pepper, the mushrooms, and the butter and sauté until the veggies are tender.
Step 6 -Add the veggie mixture to the egg mixture.
Step 7 -Pour the spinach mixture into the prepared baking dish.
Step 8 -Bake the casserole, uncovered, until an instant thermometer inserted into the center reads 160 degrees F, about 30-35 minutes.
Step 9 -Let the casserole stand for 10 minutes.
Step 10 -Serve.
