Ingredients
- 1 1/2 cups shortening
- 2 cups sugar, plus more, to taste, for dusting the work surface
- 4 large eggs, room temperature
- 4 teaspoons water
- 4 cups all-purpose flour, plus more, to taste, for dusting the cookie cutter
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 4 cups quick-cooking oats
- 2 cups raisins, chopped
- 1 cup walnuts, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a baking sheet.
Step 3 -In a bowl, add the shortening and 2 cups of the sugar and mix with an electric hand mixer until light and fluffy, about 5-7 minutes.
Step 4 -Add the eggs, 1 at a time, to the shortening mixture and beat well after each addition.
Step 5 -Add the water to the shortening mixture and beat to combine.
Step 6 -In a second bowl, add 4 cups of the flour, the baking soda, the cinnamon, and the salt and whisk to combine.
Step 7 -Add the flour mixture to the shortening mixture and mix well.
Step 8 -Stir the oats, the raisins, and the walnuts into the cookie dough.
Step 9 -Use the extra sugar to dust a work surface.
Step 10 -Place the cookie dough on the prepared work surface and roll it out to 1/4-inch thickness.
Step 11 -Use the extra flour to coat a 2 1/2-inch cookie cutter, then cut the dough and place the cookies 2-inches apart on the prepared baking sheet.
Step 12 -Bake the cookies until they are set, about 12-15 minutes.
Step 13 -Transfer the cookies to a wire rack to cool.
Step 14 -Repeat the baking process with the remaining dough.
Step 15 -Serve.
