When al dente egg noodles, baked savory ham, tender broccoli flowerets, flavorful asparagus, and sweet corn join forces with the cheesy cream sauce... well, let's just say Nana pulls it off every time and produces a life-affirming meal that helps us get through the week. Ingredients
- 8 ounces egg noodles
- 1 (10.75-ounce) can condensed cream of mushroom soup
- 1 (8-ounce) container chive and onion-flavored cream cheese, softened
- 2/3 cup milk
- 2 cups leftover ham, cooked and chopped, can substitute ham steak, chopped
- 1 1/2 cups fresh broccoli florets
- 1 (10-ounce) package frozen asparagus, thawed
- 6 baby carrots, chopped
- 1 (8-ounce) package mozzarella cheese, shredded
- 4 ounces cheddar cheese, shredded
- 1/2 cup seasoned croutons, crushed
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Lightly grease two 9x13-inch baking dishes.
Step 3 -In a pot of salted, boiling water, cook the egg noodles to al dente, according to the package directions and then drain the noodles.
Step 4 -In a large bowl, add the cream of mushroom soup, the cream cheese, and the milk and stir to combine.
Step 5 -Add the cooked noodles, the ham, the broccoli florets, the asparagus, and the carrots to the soup mixture and stir to combine.
Step 6 -Equally divide 1/2 of the ham mixture between the two prepared baking dishes, spreading the mixture out evenly in both dishes.
Step 7 -In a medium bowl, add the mozzarella cheese and the cheddar cheese and stir to combine.
Step 8 -Equally divide 1/2 of the cheese mixture between the tops of the ham mixtures in both of the prepared baking dishes.
Step 9 -Equally divide the remaining ham mixture on top of the cheese mixture layer in both of the prepared baking dishes.
Step 10 -Add the croutons to the remaining cheese mixture in the bowl and stir to combine.
Step 11 -Equally divide and sprinkle the remaining cheese mixture on top of the ham mixture layer of both of the prepared baking dishes.
Step 12 -Bake both casseroles, uncovered, until lightly-browned and warmed through, about 30 minutes, or bake one and wrap the other casserole in heavy-duty aluminum foil and freeze for up to 1 month.
Step 13 -Serve.
