Ingredients

  • 1 cup water
  • 6 tablespoons butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 2 large eggs
  • vegetable oil, for frying
  • cinnamon sugar

Directions

Step 1 -Combine the butter, water, and sugar in a saucepan over medium heat.

Step 2 -Once boiling, add the vanilla.

Step 3 -Cut the heat, then add the flour and salt.

Step 4 -Stir until the mixture begins to thicken, then allow to cool for up to 8-10 minutes.

Step 5 -Beat the eggs into the cooled mixture one at a time using a hand mixer.

Step 6 -Using a rubber spatula, transfer the mix into a piping bag with a star tip.

Step 7 -Add enough oil to a large pot, over medium heat, to where it comes halfway up the sides.

Step 8 -Ensure the oil temperature stays at 375 degrees F.

Step 9 -Carefully pipe 5-inch long churros into the hot oil. Use kitchen scissors to cut each churro off as you pipe the dough into the oil.

Step 10 -3-4 churros can be added to the oil at a time, allowing enough space so they don't stick to one another.

Step 11 -Fry them for 4-5 minutes until golden brown.

Step 12 -Between each batch, ensure the frying oil is back to 375 degrees F to avoid burning.

Step 13 -Remove the churros with a slotted spoon and immediately roll them in cinnamon sugar.

Step 14 -Place the churros onto a wire rack to allow them to cool.

Step 15 -Serve once cooled.
