Ingredients
- 8-10 slices bacon, long enough to wrap the length of the pork
- 1 pound pork tenderloin, room temperature, silver-skin trimmed
- salt, to taste
- pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons honey
Directions
Step 1 -Preheat the oven to 390 degrees F.
Step 2 -Lay the bacon strips vertically, slightly overlapping, on a cutting board.
Step 3 -Season the pork tenderloin with the salt and the pepper.
Step 4 -Tuck the thin end of the pork tenderloin under so it is roughly the same thickness from end to end.
Step 5 -In an ovenproof skillet over high heat, heat the oil.
Step 6 -Add the pork tenderloin to the oil and sear on all sides until it is nicely browned.
Step 7 -Transfer the pork tenderloin away from the heat and let it rest until it is cool enough to handle.
Step 8 -Place the seared pork tenderloin on the arranged bacon slices at the end closest to you.
Step 9 -Place a long knife under the bacon layer and lift the bacon under the pork and roll so the bacon wraps around the pork. Continue until it is completely wrapped. Finish with the bacon seam-side down.
Step 10 -Place the wrapped tenderloin in the skillet. Drizzle it with the honey and brush to coat it completely.
Step 11 -Transfer the skillet to the oven and roast the wrapped tenderloin until the internal temperature reaches 149 degrees F for medium, about 20 minutes, and 155 degrees F for well, about 23 minutes.
Step 12 -Transfer the skillet from the oven and baste the wrapped tenderloin with the pan juices, mopping up plenty of the honey and juices pooled in the pan.
Step 13 -Let the wrapped tenderloin rest for 5 minutes.
Step 14 -Baste the wrapped tenderloin once more, then cut it into thick slices.
Step 15 -Serve the wrapped tenderloin drizzled with the remaining pan juices.
