Ingredients
- 2 cups flour
- 3 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups milk
- 2 eggs
- 1 tablespoon butter, plus more, to taste
- 2 cups trail mix, of your choice
Directions
Step 1 -In a medium mixing bowl, whisk together the flour, the sugar, the baking powder, and the salt.
Step 2 -Add the milk and the eggs to the dry ingredients, whisking to incorporate but being careful not to overmix. The batter should be lumpy.
Step 3 -Heat a large skillet on the stovetop over medium heat.
Step 4 -Melt 1 tablespoon of the butter in the skillet until foamy.
Step 5 -Pour 1/3 cup of the batter onto the skillet for each pancake.
Step 6 -Sprinkle each of the pancakes with 1-2 tablespoons of the trail mix.
Step 7 -Cook until the surface of the pancakes has bubbles, about 1-2 minutes.
Step 8 -Flip the pancakes until all sides are golden-brown, about 1-2 minutes.
Step 9 -Repeat with the remaining batter until all of the pancakes are made, ensuring to use the extra butter before each batch.
Step 10 -Serve hot!
