Look no further than this Southwest Breakfast Bake; with a fluffy bed of hearty eggs, seasoned with spicy chili powder, all combined with pepper jack and sharp cheddar cheese, and crunchy tortilla chips. Serve it up with salsa or sour cream for the full Tex-Mex experience! No matter what, it's happy trails to a zesty morning with Southwest Breakfast Bake on the table!

Ingredients
- 4 cups baked tortilla chips
- 6 egg whites, plus 4 large eggs
- 1/4 cup skim milk
- 3/4 teaspoon ancho chili powder
- 1/8 teaspoon freshly ground black pepper
- 1 (4-ounce) can mild chopped green chiles
- 1 tablespoon fresh cilantro, chopped, plus more whole leaves, to taste, for garnish
- 1/2 cup sharp cheddar cheese, shredded, divided
- 1/2 cup pepper jack cheese, shredded, divided
- 1/2 cup green salsa verde, store-bought or homemade, for serving
- sour cream, optional, to taste, for serving
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Lightly coat a 2-quart baking dish with nonstick spray.
Step 3 -Coarsely crush the chips by hand and spread 1/2 of them into the bottom of the prepared baking dish.
Step 4 -In a large bowl, add the egg whites, the eggs, the milk, the ancho chili powder, and the pepper and whisk until well-combined.
Step 5 -Add the chopped chiles, 1 tablespoon of the chopped cilantro, 1/4 cup of the cheddar, and 1/4 cup of the pepper jack and stir to combine.
Step 6 -Pour the egg mixture into the prepared baking dish.
Step 7 -Sprinkle the remaining crushed chips over top of the egg mixture.
Step 8 -Bake until the egg mixture is set around the edges, but still a little loose in the center, about 20-25 minutes.
Step 9 -Sprinkle the remaining cheddar cheese and the remaining pepper jack cheese on top of the casserole and bake until the cheeses are melted and the casserole is set in the center, about 10 minutes.
Step 10 -Let the casserole stand for 10 minutes.
Step 11 -Serve the casserole garnished with the extra cilantro leaves and with the salsa and the sour cream.
