Whether you choose to dance the night away or catch a few z's, everyone at the party will truthfully say that Sleepover Bread is the best!

Ingredients
- 1/2 cup old-fashioned rolled oats
- 2 cups white whole-wheat flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 1 cup sugar
- 6 tablespoons grapeseed oil
- 1 tablespoon lemon zest
- 1 1/2 cups zucchini, shredded
- 2 cups fresh blueberries
- 1/4 cup confectioners' sugar
- 1 teaspoon lemon juice
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x5-inch loaf pan with cooking spray.
Step 3 -Evenly spread the oats on a rimmed baking sheet.
Step 4 -Bake the oats until they are lightly toasted, about 10 minutes.
Step 5 -Let the oats cool for 10 minutes.
Step 6 -In a large bowl, add the toasted oats, the flour, the baking powder, and the salt and whisk to combine.
Step 7 -In a medium bowl, add the eggs, the sugar, the oil, and the lemon zest and whisk to combine.
Step 8 -Add the zucchini to the egg mixture and stir until it is incorporated.
Step 9 -Fold the zucchini mixture into the flour mixture until it is just combined.
Step 10 -Fold the blueberries into the bread batter.
Step 11 -Pour the bread batter into the prepared loaf pan.
Step 12 -Bake the bread until a toothpick inserted into the center comes out clean, about 1 hour 15 minutes.
Step 13 -Let the bread cool in the pan for 5 minutes.
Step 14 -Run a knife along the sides of the loaf to loosen the bread from the pan and then invert it onto a wire rack.
Step 15 -Let the bread cool completely, about 1 hour.
Step 16 -In a small bowl, add the confectioners' sugar and the lemon juice and whisk until it is smooth.
Step 17 -Drizzle the glaze over the cooled loaf.
Step 18 -Slice and serve.
