Surely you've heard of scalloped potatoes, but what about a more summery take on the beloved dish? Something a little sweeter, a little brighter, a little more corny? Well, a lot more corny, really. Scalloped Corn Casserole is a creamy, savory bake with a lot of flavor packed into it, with a crunchy breadcrumb topping to boot! You can't really go wrong with the Scalloped Corn Casserole: not the speed and certainly not the taste!

Ingredients
- 3 tablespoons unsalted butter, divided, plus more, to taste, for greasing the pan
- 2 tablespoons all-purpose flour
- 1 cup milk
- kosher salt, to taste
- ground black pepper, to taste
- 1 large egg, beaten
- 3 cups corn kernels, canned, fresh, or frozen, cooked
- 1 green bell pepper, finely chopped
- 1 teaspoon granulated sugar
- 1/2 cup soft fresh breadcrumbs
- paprika, to taste
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Butter a 1 1/2-quart baking dish.
Step 3 -Melt 2 tablespoons of the butter in a saucepan over low heat.
Step 4 -Stir the flour into the melted butter and cook, stirring, until golden and the raw flour smell disappears, about 2 minutes.
Step 5 -Gradually stir in the milk and continue cooking over low heat, stirring constantly, until the sauce begins to thicken.
Step 6 -Season with the salt and the pepper.
Step 7 -Add a small amount of the sauce to the beaten egg, stirring briskly as you add the sauce to help temper the egg.
Step 8 -Stir the egg mixture back into the sauce in the saucepan.
Step 9 -Cook and stir constantly for about 1 minute to incorporate; do not boil.
Step 10 -Add the corn, the green pepper, and the sugar to the sauce mixture and cook until heated through.
Step 11 -Melt the remaining butter in a small microwave-proof bowl.
Step 12 -Add the soft breadcrumbs to the melted butter and stir to combine.
Step 13 -Pour the corn mixture into the prepared casserole dish.
Step 14 -Cover the corn mixture with the buttered breadcrumbs and sprinkle with the paprika.
Step 15 -Bake in the oven until hot and bubbly and the breadcrumbs are browned, about 20-25 minutes.
Step 16 -Serve.
