Ingredients
- For the beef:
- 1/4 cup extra-virgin olive oil
- juice of 1/2 lemon
- 2 tablespoons packed brown sugar
- 1 tablespoon Worcestershire sauce
- 4 cloves garlic, minced
- 1 (2-pound) London broil top-round steak
- kosher salt, to taste
- freshly ground black pepper, to taste
- For the herb butter:
- 1 stick butter, softened
- 1 tablespoon parsley, freshly chopped
- 2 teaspoons chives, freshly chopped
- zest of 1/2 lemon
- 1/2 teaspoon kosher salt
- crushed red pepper flakes, to taste
Directions
Step 1 -In a medium bowl, whisk together the oil, lemon juice, brown sugar, Worcestershire sauce, and garlic.
Step 2 -Season the steak generously with salt and pepper.
Step 3 -Rub the oil mixture all over the steak.
Step 4 -Let the steak sit at room temperature for at least 1 hour or refrigerate up to overnight.
Step 5 -Preheat the broiler.
Step 6 -Brush off the garlic.
Step 7 -Place the steak on a sheet pan.
Step 8 -Place the pan on the top rack of the oven closest to the heating element.
Step 9 -Broil the steak until the top is lightly charred, about 6-7 minutes.
Step 10 -Flip the steak and continue broiling until the internal temperature reaches 135 degrees F, about 4-7 minutes.
Step 11 -Let the steak rest for 10 minutes.
Step 12 -In a small bowl, mix the butter, parsley, chives, lemon zest, salt, and red pepper flakes until smooth.
Step 13 -Carve the steak against the grain.
Step 14 -Serve with the herb butter.
