Ingredients
- 2 pounds ground beef
- 2 (10.5-ounce) cans cream of mushroom soup
- 1 1/2 cups milk
- salt, to taste
- black pepper, to taste
- 5 small potatoes, peeled and sliced
- 1 1/2 cups Colby-Jack or cheddar cheese, shredded
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with cooking spray.
Step 3 -In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until the beef is no longer pink, about 5-7 minutes.
Step 4 -In a mixing bowl, add the cream of mushroom soup, the milk, the salt, and the black pepper and whisk to combine.
Step 5 -In the prepared baking dish, layer 1/2 of the potato slices, 1/2 of the beef, 1/2 of the soup mixture, and 1/2 of the cheese, in that order.
Step 6 -Repeat the layers once.
Step 7 -Cover the baking dish with foil and bake it for 1 hour.
Step 8 -Remove and discard the foil and bake the casserole until the potatoes are fork-tender, about 30 minutes.
Step 9 -Allow the casserole to rest for 10 minutes.
Step 10 -Serve garnished with the parsley.
