Ingredients
- 1 1/2 pounds chicken thighs, boneless and skinless
- 1/2 teaspoon chili powder
- 1 teaspoon Italian seasoning
- salt, to taste
- black pepper, to taste
- 2 tablespoons olive oil
- 2 medium yellow peaches, pitted and sliced
- 3 tablespoons honey
- 1 1/2 tablespoons lemon juice
- 2 tablespoons butter
- fresh thyme sprigs, to taste, for garnish
Directions
Step 1 -Heat a cast-iron skillet over medium heat until it is heated through, about 2 minutes.
Step 2 -Evenly season both sides of each of the chicken thighs with the chili powder, the Italian seasoning, the salt, and the pepper.
Step 3 -Add the olive oil and the seasoned chicken thighs to the heated skillet and cook, undisturbed, about 5 minutes.
Step 4 -Flip the chicken thighs then reduce the heat to low-medium. Cook until they reach an internal temperature of 165 degrees F, about 5 minutes.
Step 5 -Transfer the cooked chicken thighs to a plate.
Step 6 -In the same cast-iron skillet over medium heat, add the peaches and cook, about 4-5 minutes.
Step 7 -Add the honey, the lemon juice, and the butter to the peaches and cook, while stirring, until the mixture is syrupy, about 30 seconds.
Step 8 -Nestle the cooked chicken thighs in the peach mixture and cook until the meat is heated through.
Step 9 -Transfer the cast-iron skillet from the heat and evenly sprinkle the chicken thighs with the fresh thyme.
Step 10 -Serve.
