Coffee Shop Casserole transforms the humble breakfast sandwich into a shareable, sliceable meal. Fluffy, hearty eggs, sharp white cheddar, tangy cream cheese, and juicy tomatoes all mix together with fragrant and tender everything bagels. A little homemade everything bagel seasoning sprinkled on top helps ensure no bite misses out on the great taste, which your tastebuds will deeply appreciate. Ingredients
- 4 everything bagels, chopped
- 1 1/2 cups white cheddar, shredded
- 1 1/2 cups cherry tomatoes, halved
- 1 (8-ounce) block cream cheese, cut into 1/2-inch cubes
- 1/2 red onion, thinly sliced
- 8 large eggs
- 2 1/2 cups milk
- 2 green onions, sliced, plus more for garnish
- kosher salt, to taste
- ground black pepper, to taste
- cayenne, to taste
- 1 teaspoon poppy seeds
- 1 teaspoon dried minced onion
- 1 teaspoon sesame seeds
- 1 teaspoon dried garlic
- 1 teaspoon coarse salt
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking pan with cooking spray.
Step 3 -Scatter 1/2 of the bagel pieces in the prepared baking pan.
Step 4 -Top the bagel-piece layer with 1/2 of the cheese, 1/2 of the tomatoes, 1/2 of the cream cheese, and 1/2 of the red onion.
Step 5 -Repeat the layers once, starting with the remaining bagel pieces.
Step 6 -In a large bowl, whisk together the eggs, the milk, and the green onions.
Step 7 -Season the egg mixture with the salt, the pepper, and the cayenne pepper.
Step 8 -Pour the milk mixture over the bagel mixture, making sure to coat each bagel piece.
Step 9 -Season the mixture with the poppy seeds, the onion, the sesame seeds, the garlic, and the coarse salt.
Step 10 -Cover the dish with foil and bake for 45 minutes.
Step 11 -Carefully remove the foil and bake until the bagel pieces are golden and the eggs are cooked through, about 25 minutes.
Step 12 -Let the bake cool for 30 minutes.
Step 13 -Garnish with the green onions and serve.
