Just add some sweet potatoes, chicken, an egg, and some seasoning into a mug, pop it in the microwave, and voila: a nourishing dish in no time! Top your Busy Year Breakfast with salsa, shredded cheese, diced avocado, or whatever your heart desires, and enjoy a low-effort yet scrumptious meal.

Ingredients
- 1/4 cup sweet potatoes, diced
- 1 tablespoon water, plus more to taste
- 1/2 cup chicken, cooked and roughly chopped
- 1/4 teaspoon paprika
- salt, to taste
- pepper, to taste
- 1 egg
- salsa, optional, to taste
- cheese, optional, to taste, shredded
- avocado, optional, to taste, diced
Directions
Step 1 -In a wide microwavable mug or small microwaveable bowl, add the sweet potatoes with 1 tablespoon of the water and microwave until tender, about 2-5 minutes.
Step 2 -Stir the chicken, the paprika, the salt, and the pepper into the sweet potato mixture.
Step 3 -Microwave the chicken mixture until warmed, about 1 minute.
Step 4 -Crack the egg on top of the chicken mixture.
Step 5 -Sprinkle the remaining water on top of the egg and microwave until the egg whites are solid but the yolk is still runny, about 30 seconds-1 minute.
Step 6 -Serve immediately with your favorite toppings.
