Upscale Saltine Bites look and taste like something that could be passed around at a black-tie event, but you can also make them for your casual get-together in less than half an hour! Atop the classic crunchy cracker is a creamy, tangy herb and garlic spread and a sweet, juicy blistered tomato. There's bright flavor and aroma in each bite, so don't be surprised when you suddenly run out of Upscale Saltine Bites! This is snacking made easy and classy all at once!

Ingredients
- 2 tablespoons olive oil
- 32 cherry tomatoes
- 1 sprig oregano
- 1/8 teaspoon red pepper flakes
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 teaspoon Champagne vinegar, optional
- 1 cup fresh basil, chopped and packed, plus more, whole leaves, to taste, for garnish
- 1 small clove garlic
- 1/2 cup mayonnaise
- 1 tablespoon sour cream
- 2 teaspoons fresh lemon juice
- 32 saltine crackers
Directions
Step 1 -In a medium skillet over medium heat, add the oil.
Step 2 -Add the tomatoes, the oregano, the red pepper flakes, the salt, and the pepper and cook, while stirring occasionally, just until the tomatoes burst, about 4-5 minutes.
Step 3 -Add the vinegar and stir to combine.
Step 4 -Allow the tomato mixture to cool to room temperature.
Step 5 -Remove and discard the oregano sprig, then cut each of the tomatoes in half lengthwise.
Step 6 -In a blender, add 1 cup of the chopped basil, the garlic, the mayonnaise, the sour cream, and the lemon juice and blend, scraping down the sides as needed, until smooth.
Step 7 -Season the mayo mixture with the salt and the pepper.
Step 8 -Spread the mayo mixture evenly on the saltines.
Step 9 -Top each of the saltine crackers with 1 of the tomatoes.
Step 10 -Garnish each cracker with the extra basil leaves and serve.
