Ingredients
- 10 slices bacon, chopped
- 1/4 cup butter
- 4 cloves garlic, minced
- 1/2 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup heavy whipping cream
- 1 (8-ounce) package cream cheese, softened
- 1 (8-ounce) package extra-sharp cheddar cheese, shredded
- 8 cups corn kernels, fresh or frozen, thawed if frozen
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 cups French fried onions
- fresh parsley leaves, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 3-quart baking dish with cooking spray.
Step 3 -In a large skillet over medium heat, add the bacon and cook until crisp.
Step 4 -Use a slotted spoon to transfer the bacon to drain on a paper-towel-lined plate.
Step 5 -Reserve 2 tablespoons of the bacon grease in the skillet and discard the rest.
Step 6 -Melt the butter in the reserved bacon grease over medium heat.
Step 7 -Add the garlic and cook for 2 minutes.
Step 8 -Whisk the flour into the garlic mixture and cook, whisking constantly, for 2 minutes.
Step 9 -Gradually whisk the broth and the heavy whipping cream into the garlic mixture and cook, whisking occasionally, until it is thick and bubbly, about 8 minutes.
Step 10 -Stir the cream cheese and the cheddar into the cream mixture until melted and smooth.
Step 11 -Stir the corn, 2 tablespoons of the chopped parsley, the salt, the pepper, and the cooked bacon into the sauce.
Step 12 -Pour the bacon mixture into the prepared dish and sprinkle with the French fried onions.
Step 13 -Bake the casserole until it is hot and bubbly, about 30 minutes.
Step 14 -Let the casserole stand for 10 minutes.
Step 15 -Garnish with the fresh parsley leaves and serve.
