Ingredients

1 pound lean ground beef
1 onion, diced
2 cloves garlic, minced
1 (1 ounce) packet taco seasoning mix
1/2 cup water
2/3 cup enchilada sauce
1 1/2 cups frozen corn
1 1/2 cups bell pepper, diced
1 (12 ounce) can black beans, drained and rinsed
1 1/2 cups cheddar cheese, shredded
16 ounces frozen tater tots
For the topping:
1/3 cup enchilada sauce
1/3 cup salsa
1 1/2 cups cheddar cheese, shredded and divided
tomatoes, optional, to taste
lettuce, optional, to taste
sour cream, optional, to taste
guacamole, optional, to taste

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a nonstick skillet over medium heat, cook the beef, onion, and garlic until the onions are tender and the beef is browned, about 5 minutes.

Step 3 -Add the taco seasoning and stir.

Step 4 -Add the 1/2 cup of water, 2/3 cup of the enchilada sauce, the corn, the bell pepper, and the beans.

Step 5 -Cook until the bell pepper is tender and the sauce has thickened, about 4-5 minutes.

Step 6 -Pour the beef mixture into a casserole dish and sprinkle 1 1/2 cups of the cheese over top.

Step 7 -Arrange the tater tots evenly over the cheese layer in the dish.

Step 8 -Bake for 30 minutes.

Step 9 -In a small bowl, combine the remaining 1/3 cup of the enchilada sauce with the salsa.

Step 10 -Spread the sauce mixture over the tater tots and top with the remaining cheese.

Step 11 -Bake until the cheese has melted, about 10 minutes.

Step 12 -Serve hot with your favorite toppings.
