Calling this Strawberry Bread a bread is a little disingenuous. It is actually a summery, sweet cake in loaf form, just begging to be sliced up and served with a cup of tea. The smile that crosses your face as you dive into the buttery, tender cake, loaded and topped with refreshingly bright strawberries, can't be matched... until you also taste the sweet and creamy glaze over top! Strawberry Bread evokes garden parties and warm weather and joy, all in a simple slice!

Ingredients
- For the cake:
- 1 1/2 cups plus 1 tablespoon all-purpose flour, divided
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/2 cup salted butter, softened
- 2 large eggs, at room temperature
- 1/2 cup light cream
- 1 tablespoon lemon juice
- 1 1/4 cups fresh strawberries, diced and divided
- For the glaze:
- 2 tablespoons powdered sugar
- 1 teaspoon milk, or more or less as needed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease an 8x4-inch baking pan.
Step 3 -In a bowl, combine 1 1/2 cups of the flour, the baking powder, and the salt with a whisk.
Step 4 -In a separate medium bowl, cream together the sugar and the butter.
Step 5 -Add the eggs, the cream, and the lemon juice to the butter mixture and mix well to combine.
Step 6 -Add the dry mixture to the butter mixture and stir just until combined. Do not overmix.
Step 7 -Set aside 2 tablespoons of the strawberries for topping the bread.
Step 8 -Toss the remaining strawberries with 1 tablespoon of the flour. Remove any excess flour from the strawberries and then gently fold the strawberries into the batter.
Step 9 -Spread the batter into the prepared baking pan.
Step 10 -Top the batter with the reserved strawberries.
Step 11 -Bake until a toothpick inserted into the center comes out clean, about 60-70 minutes.
Step 12 -Transfer the bread from the pan and allow it to cool on a wire rack.
Step 13 -Combine the powdered sugar and the milk together in a bowl until smooth.
Step 14 -Drizzle the glaze over the bread and allow it to set.
Step 15 -Slice and serve!
