This Spanish Potato Salad wants to add a little more to your potato salad... or a lot more! Seasoned with classic Spanish seasonings, Spanish Potato Salad also adds in spicy, succulent smoked chorizo, Spanish olives, and roasted red peppers! Spanish Potato Salad is Spain's answer to potato salad and wow, what an answer it is!

Ingredients
- 8 medium red potatoes, washed and cut into 1-inch-sized pieces
- water, to taste
- 1 tablespoon plus 1/4 teaspoon salt, divided
- 3 tablespoons sherry vinegar
- 3 cloves garlic, minced
- 2 teaspoons Dijon mustard
- 5 tablespoons extra-virgin olive oil
- 1 teaspoon sweet smoked paprika
- 1/4 teaspoon hot Spanish smoked paprika
- 1/4 teaspoon fresh black pepper
- 1/2 cup cherry tomatoes, cut in half
- 1/3 cup jarred Spanish Manzanilla green olives with pimentos, halved
- 1/3 cup roasted red peppers, chopped
- 1/4 cup Spanish cured chorizo, cubed
- 2 tablespoons scallions, chopped
- 2 tablespoons fresh parsley, chopped, for garnish
Directions
Step 1 -In a large pot, add the potatoes and enough of the water to cover them.
Step 2 -Add 1 tablespoon of the salt and stir briefly to combine. Bring the water to a boil.
Step 3 -Boil the potatoes until they are fork-tender, about 20-25 minutes.
Step 4 -Drain the potatoes and allow them to cool.
Step 5 -In a jar with a lid, add the sherry vinegar, the garlic, the Dijon mustard, the olive oil, the sweet paprika, the hot paprika, the remaining salt, and the black pepper and seal and shake the jar to combine.
Step 6 -In a mixing bowl, add the potatoes and the dressing mixture and gently toss to coat.
Step 7 -Add the tomatoes, the olives, the roasted red peppers, the chorizo, and the scallions to the bowl and toss again to coat and combine.
Step 8 -Transfer the potato salad mixture to a serving plate.
Step 9 -Serve garnished with the parsley.
