This casserole is essentially all your school cafeteria favorites in one dish! That's pure nostalgia, and it sure tastes amazing! Sloppy Joe Cornbread Casserole piles sweet, tangy, saucy beef over some tender, summery cornbread, and makes such a delicious meal out of both! Oh, and that sharp cheddar cheese on top that's melty and golden-brown? Just a wonderful bonus! This Sloppy Joe Cornbread Casserole brings you back to childhood and it's a hoot and a half!

Ingredients
- 1 (15-ounce) package cornbread mix
- 2 eggs, beaten
- 1 1/3 cups milk
- 2 pounds lean ground beef
- 1 cup ketchup
- 2 tablespoons brown sugar
- 2 teaspoons yellow mustard
- 1 teaspoon garlic powder
- 1 (15-ounce) can corn, drained
- 1 1/2 cups cheddar cheese, shredded
- fresh parsley, chopped, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Spray a 9x13-inch baking dish with cooking spray.
Step 3 -In a mixing bowl, whisk the cornbread mix, the eggs, and milk together until smooth.
Step 4 -Spread the cornbread batter evenly in the prepared baking dish.
Step 5 -Bake until the cornbread is not entirely baked through, about 20 minutes.
Step 6 -In a skillet over medium-high heat, add the ground beef and cook, while crumbling, until browned, about 5-7 minutes. Drain the excess fat from the skillet.
Step 7 -Mix the ketchup, the brown sugar, the mustard, and the garlic powder into the beef.
Step 8 -Keep the sloppy joe mixture on low heat to stay warm.
Step 9 -Top the partially baked cornbread with the corn.
Step 10 -Spread the sloppy joe mixture evenly over the corn layer.
Step 11 -Sprinkle the shredded cheese over the casserole.
Step 12 -Bake until the cheese is melted and the cornbread is cooked through, about 15 minutes.
Step 13 -Let the casserole rest for 5 minutes.
Step 14 -Garnish with the parsley and serve.
