Riquísimo Bake translates directly to "Delicious Bake." When you try this Tex-Mex casserole for yourself, you're sure to agree! A fluffy bed of rice is cooked in beef broth so each bite is savory and succulent, and it's mixed with juicy taco meat, tender sautéed fajita veggies, and vibrant salsa. Topped with melty cheese, because neither Tex-Mex nor casseroles are really complete without cheese, the Riquísimo Bake sets out to wow and dazzle the senses! Dinner is definitely served!

Ingredients
- 2 tablespoons oil
- 1 1/2 pounds ground beef
- 4-5 cloves garlic, finely chopped
- 3 small bell peppers, color of your choice, diced
- 3 tablespoons taco seasoning
- 1 1/2 cups corn kernels
- 1 (15-ounce) jar salsa
- 1 cup rice
- 1 (15-ounce) can black beans, drained
- 4 cups cheddar cheese, shredded, divided
- 1 1/2 cups beef broth
- fresh coriander, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -In an oven-proof skillet over medium-high heat, heat the oil.
Step 3 -Add the ground beef to the hot oil and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 4 -Add the garlic and the bell peppers and cook until the bell pepper begins to soften, about 5 minutes.
Step 5 -Stir in the taco seasoning and cook until fragrant, about 2 minutes.
Step 6 -Add in the corn, the salsa, the rice, the black beans, 1 cup of the cheddar cheese, and the beef broth and stir to combine.
Step 7 -Top the beef mixture with the remaining cheese.
Step 8 -Cover and bake the skillet until the rice is tender and the liquid is absorbed, about 25-30 minutes.
Step 9 -Uncover the skillet and bake until the cheese is melted, about 3-5 minutes.
Step 10 -Serve garnished with the fresh coriander.
