  • 1 cup sushi rice
  • 1/2 cup cider vinegar
  • 1 tablespoon sugar
  • 1 small red onion, thinly sliced
  • 1/3 cup mayonnaise
  • 4 teaspoons sriracha sauce
  • 1 pound chicken breast, boneless and skinless
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon honey
  • 1 medium ripe avocado, sliced
  • 1/2 small cucumber, thinly sliced
  • 1 cup alfalfa or bean sprouts
  • green onions, to taste, sliced

Directions

Step 1 -Cook the rice according to the package instructions.

Step 2 -Whisk together the vinegar and the sugar until the sugar is dissolved.

Step 3 -Add red onions to the vinegar mixture.

Step 4 -Place the red onion mixture in a sealable jar and refrigerate for 30 minutes.

Step 5 -Stir together the mayonnaise and the sriracha sauce.

Step 6 -Cover and refrigerate the sriracha mayo.

Step 7 -Add the chicken, the soy sauce, the sesame oil, and the honey in a large skillet or wok.

Step 8 -Cook over medium-low heat until the chicken breasts are cooked through at 165 degrees F, about 5-6 minutes per side.

Step 9 -Shred the chicken breasts.

Step 10 -Place the rice evenly into 4 serving bowls.

Step 11 -Add the chicken mixture to evenly to the bowls, then top with the avocado, the cucumber, the sprouts, the reserved pickled onions, the sriracha mayo, and the green onions.
