Ingredients

  • 1 cup white sugar
  • 1 cup shortening
  • 1 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 4 cups all-purpose flour

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -In a saucepan over low heat, add the sugar, the shortening, and the honey and stir to combine.

Step 3 -Let the sugar mixture cool.

Step 4 -In a bowl, add the eggs, the vanilla, the baking soda, and the ginger and stir to combine.

Step 5 -Gradually add the egg mixture to the cooled honey mixture, stirring to combine. Make sure the honey mixture is cool enough so it does not scramble the eggs.

Step 6 -Slowly add the flour to the mixture and stir until well-blended.

Step 7 -Drop the dough by the teaspoonful onto cookie sheets about 2 inches apart.

Step 8 -Bake the cookies until golden, about 12-15 minutes.

Step 9 -Serve.
