It's the new year and the party shouldn't stop just because it's finally morning! You need something to really wake you up to the bright beginnings! This calls for New Year's Day Breakfast Skillet! The sweet and tender bed of summer squash mixes with the heat of jalapeño and cushions delightfully runny, savory eggs and cheese. Few dishes are as sunny as New Year's Day Breakfast Skillet and few dishes make you feel as sunny in turn! Time to bring on whatever the year can throw at you!

Ingredients
- 3 pounds summer squash and/or zucchini, grated
- kosher salt, to taste
- 2 tablespoons extra-virgin olive oil
- 4 scallions, thinly sliced, white and green parts separated
- 1 jalapeño pepper, seeded and minced
- 3 tablespoons fresh parsley, chopped
- 1/4 teaspoon nutmeg, freshly grated
- freshly ground pepper, to taste
- 1 tablespoon unsalted butter
- 6 large eggs
- 1/2 cup Pepper Jack or sharp white cheddar cheese, grated
Directions
Step 1 -In a bowl, toss the squash with the salt and let drain in the sink, about 30-40 minutes.
Step 2 -Squeeze the squash to remove as much moisture and liquid as possible.
Step 3 -Preheat the oven to 375 degrees F.
Step 4 -Heat the olive oil in a large ovenproof skillet over medium-high heat.
Step 5 -Set aside 3 tablespoons of the scallion greens and add the remaining scallions (both white and green parts), the jalapeño, and the salt to the hot oil.
Step 6 -Cook until the scallions are soft, about 3 minutes.
Step 7 -Add the shredded squash to the scallions and cook, stirring occasionally, until tender, about 7 minutes.
Step 8 -Stir the parsley, the nutmeg, and the pepper into the veggie mixture.
Step 9 -Cook until the mixture is slightly dry, about 1 minute.
Step 10 -Transfer the skillet from the heat and let cool for 5 minutes.
Step 11 -Spread the squash evenly in the skillet.
Step 12 -Make six 2 1/2-inch-wide indentations in the mixture with the back of a spoon and place 1/2 teaspoon of the butter in each.
Step 13 -One at a time, crack an egg into a small bowl then pour it into an indentation.
Step 14 -Season the mixture with the salt and the pepper and then sprinkle with the cheese.
Step 15 -Bake until the egg whites are set and the yolks are cooked to desired doneness, about 10-12 minutes.
Step 16 -Sprinkle with the reserved green onions and serve.
