Ingredients
- 1/3 cup all-purpose flour
- 4 cups reduced-fat milk, divided
- 2 (8.8-ounce) packages microwavable brown rice, cooked
- 3 cups fresh broccoli florets
- 1 cup carrots, finely chopped
- 3 cups chicken, cooked and shredded
- 1 1/2 cups reduced-fat extra-sharp cheddar cheese, shredded
- 2 tablespoons Buffalo-style hot sauce, plus more, to taste
- 2 tablespoons fresh dill, chopped, divided
- 3/4 teaspoon garlic powder
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup whole-wheat panko breadcrumbs
- 1 tablespoon canola oil
Directions
Step 1 -Position the oven rack about 6 inches below the heat source.
Step 2 -Preheat the oven to 400 degrees F.
Step 3 -In a small bowl, add the flour and 1 cup of the milk and whisk until smooth.
Step 4 -In a large, ovenproof, broiler-safe skillet over medium-high heat, add the remaining milk and bring it to a boil, while stirring often.
Step 5 -Reduce the stovetop heat to medium.
Step 6 -Gradually add the flour mixture to the hot milk, while whisking, until smooth and combined.
Step 7 -Increase the stovetop heat to medium-high and bring the milk mixture to a boil, while stirring constantly.
Step 8 -Continue to cook the milk mixture, while stirring constantly, until thickened, about 2-3 minutes.
Step 9 -Add the cooked rice, the broccoli, and the carrots to the milk mixture and stir to combine.
Step 10 -Cover the skillet and cook, while stirring occasionally, until the broccoli is bright green, about 2 minutes.
Step 11 -Add the chicken, the cheddar, 2 tablespoons of the hot sauce, 1 tablespoon of the dill, the garlic powder, the kosher salt, and the black pepper to the milk mixture and cook until the cheese is melted.
Step 12 -Turn off the stovetop heat.
Step 13 -In a small bowl, add the breadcrumbs and the canola oil and toss to coat.
Step 14 -Sprinkle the breadcrumbs over the chicken mixture in the skillet.
Step 15 -Bake on the top rack until the casserole is bubbly, about 15 minutes.
Step 16 -Switch the oven to the broil setting and broil until the breadcrumb topping is golden-brown, about 1-2 minutes.
Step 17 -Transfer the casserole to a cooling rack and allow it to rest for 5 minutes.
Step 18 -Serve garnished with the remaining dill and the extra hot sauce.
