Ingredients
- 1 1/2 cups all-purpose flour, plus more, to taste, for dusting the pan
- 1 cup walnuts
- 1/2 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 3 medium bananas, very ripe
- 2 large eggs, lightly beaten
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9 1/4x5 1/4x2 3/4-inch loaf pan, then using the extra flour, lightly dust the greased pan.
Step 3 -In a large skillet over medium, add the walnuts and cook, stirring constantly to avoid burning, until lightly roasted.
Step 4 -Transfer the roasted walnuts to a cutting board and coarsely chop them.
Step 5 -Allow the chopped walnuts to cool to room temperature.
Step 6 -In a large bowl, add the butter and the granulated sugar and use an electric hand mixer to cream them together.
Step 7 -In a medium bowl, add the bananas and use a fork to mash until it forms the consistency of chunky applesauce.
Step 8 -Add the mashed bananas and the eggs to the butter mixture and mix until well-blended.
Step 9 -In another medium bowl, add the remaining 1 1/2 cups of the flour, the baking soda, and the salt and whisk to combine.
Step 10 -Add the flour mixture to the batter mixture and stir to combine.
Step 11 -Add the vanilla extract, the chopped walnuts, and the raisins to the batter mixture and stir to combine.
Step 12 -Evenly pour the batter mixture into the prepared loaf pan and bake until a toothpick inserted into the center comes out clean, about 55 minutes-1 hour.
Step 13 -Transfer the banana bread to a wire rack and let it rest in the pan, about 10 minutes.
Step 14 -Invert the banana bread onto the wire rack and let it cool.
Step 15 -Slice and serve.
