These little treats feature deliciously succulent pork loin, tropical juicy pineapple, and adorable baby peppers, all grilled to perfection and slathered in sweet and tangy teriyaki sauce! Ingredients
- 1 (1-pound) pork loin, trimmed, cut into 1-inch pieces
- 1/2 small pineapple (about 1 pound), trimmed and cored, cut into 1-inch pieces (about 2 cups total)
- 1 small red onion, cut into 6 wedges then halved crosswise
- 8 ounces mini sweet peppers, mixed colors, cut into 1-inch pieces
- 2 tablespoons olive oil
- kosher salt, to taste
- black pepper, to taste
- teriyaki sauce, to taste, store-bought or homemade
- jalapeño, optional, to taste, sliced, for topping
Directions
Step 1 -Preheat the grill to medium-high heat.
Step 2 -In a large bowl, add the pork pieces, the pineapples, the red onions, the mini peppers, the oil, the salt, and the black pepper and toss to combine.
Step 3 -Alternate threading the pork pieces, the pineapples, the onions, and the peppers onto metal or soaked wooden skewers.
Step 4 -Place the skewers on the grill and cook, turning them occasionally and basting them with the teriyaki sauce during the last 5 minutes of cooking, until the pork pieces reach an internal temperature of 145 degrees F, about 8-10 minutes.
Step 5 -Serve topped with the jalapeño slices.
