Y'all! This here Low-Country Breakfast Bake is the best you will ever taste! A nice little package of fluffy eggs, crumbled bacon, perfect bell peppers, and lots of melted cheddar cheese sitting atop some softened croutons to become one of the tastiest morning meals you ever did see! Low-Country Breakfast Bake is so good, it doesn't have to be a down-home Charleston kind of meal; enjoy it wherever you roam to bring back that wonderful, everyone-is-welcome taste of home. Ingredients
- 12 slices bacon
- 3 cups croutons
- 1/4 cup butter, melted
- 2 cups cheddar cheese, grated
- 6 eggs
- 1 3/4 cups milk
- 1 bell pepper, color of your choice, diced
- 1 tablespoon prepared mustard
- salt, to taste
- black pepper, to taste
Directions
Step 1 -Line a large platter with paper towels.
Step 2 -In a large, deep skillet over medium-high heat, add the bacon and cook until crispy.
Step 3 -Transfer the cooked bacon to the prepared platter to drain. When it is cool enough to handle, crumble it and set it aside.
Step 4 -Preheat the oven to 325 degrees F.
Step 5 -Spray a 9x12-inch baking dish with non-stick cooking spray.
Step 6 -Add the croutons to the bottom of the prepared baking dish and drizzle with the melted butter.
Step 7 -Evenly sprinkle the cheddar cheese over the crouton layer.
Step 8 -In a medium bowl, add the eggs, whisking to break up the yolks.
Step 9 -Add the milk, the bell pepper, the mustard, the salt, and the black pepper and stir until well-combined.
Step 10 -Pour the egg mixture over the top of the cheddar cheese layer.
Step 11 -Evenly sprinkle the crumbled bacon over the top of the egg mixture and bake, about 40 minutes.
Step 12 -Transfer from the oven to a wire rack, and let stand before serving, about 10 minutes.
Step 13 -With a sharp knife, cut into serving-size pieces, plate, and serve.
