Ingredients

  • For the loaf:
  • 1/3 cup butter, melted
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 2% milk
  • 1 cup fresh or frozen blueberries
  • 1/2 cup nuts, chopped
  • 2 tablespoons lemon zest, grated
  • For the glaze:
  • 2 tablespoons lemon juice
  • 1/4 cup sugar

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease an 8x4-inch loaf pan.

Step 3 -In a bowl, beat the butter, 1 cup of the sugar, 3 tablespoons of the lemon juice, and the eggs together.

Step 4 -In another bowl, combine the flour, the baking powder, and the salt together.

Step 5 -Stir the flour mixture into the egg mixture, alternating with the milk and beating well after each addition.

Step 6 -Fold the blueberries, the nuts, and the lemon zest into the batter.

Step 7 -Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 1 hour-1 hour 10 minutes.

Step 8 -Allow the loaf to cool in the pan and then invert it onto a wire rack to cool slightly.

Step 9 -In a bowl, whisk the remaining lemon juice and the remaining sugar together and then drizzle the glaze over the warm loaf.

Step 10 -Let the loaf cool completely.

Step 11 -Slice and serve.
