Ingredients
- For the croutons:
- 4 cups white bread, torn into pieces
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- freshly ground black pepper, to taste
- For the dressing and the salad:
- 1 medium clove garlic, minced or grated
- 1/4 cup grated plus 1/2 cup shaved parmesan cheese, divided
- 2 tablespoons fresh lemon juice
- 1/4 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil
- 1/2 tablespoon Dijon mustard
- 1 teaspoon anchovy paste, can substitute Worcestershire sauce
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 romaine hearts or 1 large head romaine lettuce, torn or chopped into pieces
Directions
Step 1 -Preheat the oven to 300 degrees F.
Step 2 -Line an 18x26-inch baking sheet with parchment paper.
Step 3 -In a medium bowl, add the bread pieces, 2 tablespoons of the olive oil, 1/2 teaspoon of the salt, the garlic powder, and the black pepper and toss to combine.
Step 4 -Place the seasoned bread pieces on the prepared baking sheet and bake until they are evenly golden-brown and crisp, about 15 minutes.
Step 5 -Transfer the baking sheet to a wire rack and let the croutons cool until they are very crispy, about 5-10 minutes.
Step 6 -In a large bowl, add the garlic cloves, 1/4 cup of the grated parmesan cheese, the lemon juice, the mayonnaise, the Greek yogurt, the remaining olive oil, the Dijon mustard, the anchovy paste, the remaining salt, and the remaining 1/4 teaspoon of black pepper and whisk to combine.
Step 7 -In six salad plates or bowls, evenly add the romaine pieces, the remaining parmesan cheese shavings, and the homemade croutons.
Step 8 -Serve the salad drizzled with the dressing.
