With a little twist to the traditional menu, your holiday dinner can become positively tropical! Island-Style Baked Mahi takes the sweet, mild flavors of mahi-mahi and accents them with a nutty, fruity wine marinade. Made extra fatty and satisfying with mayo and butter, this tender fish literally melts in your mouth. Island-Style Baked Mahi can serve as a unique holiday main course or as a favorite weekday dinner, and elicit the same excited reaction for both occasions!

Ingredients
- 3 fillets mahi-mahi
- salt, to taste
- pepper, to taste
- 1/2 cup sherry wine
- 2 tablespoons butter, divided
- 1 cup mayonnaise
- 1 large onion, sliced
- 1/2 cup breadcrumbs
- steamed rice, optional, to taste, cooked and warm, for serving
- tomato salsa, optional, to taste, homemade or store-bought, for serving
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Rinse the fish, then sprinkle with the salt and the pepper.
Step 3 -In a large disposable food storage bag, add the sherry wine.
Step 4 -Place the fillets inside the bag, massaging them slightly to ensure every part is coated by the sherry.
Step 5 -Place the sealed bag in the refrigerator for 30 minutes to allow the fish to marinate.
Step 6 -Line a baking dish with foil, then grease the foil with 1 tablespoon of the butter.
Step 7 -Remove the fish fillets from the bag and lay them in the prepared dish.
Step 8 -Spread the mayonnaise evenly over top of each.
Step 9 -Sprinkle the onions and breadcrumbs over the top of the fillets.
Step 10 -Dot the fish with the remaining butter.
Step 11 -Place the dish in the oven and bake until a meat thermometer inserted into the thickest part of one of the fillets reads 145 degrees F, about 20 minutes.
Step 12 -Serve hot with the steamed rice and the tomato salsa!
