Ingredients
- 2 cups all-purpose flour, plus more, to taste, for dusting a work surface
- 2 cups whole-wheat flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 3 tablespoons unsalted butter, cold and cubed
- 1 large egg
- 1 2/3 cups buttermilk
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Lightly coat a large cast-iron skillet with cooking spray.
Step 3 -In a large bowl, add 2 cups of the all-purpose flour, the whole-wheat flour, the granulated sugar, the baking soda, and the salt and whisk to combine.
Step 4 -Add the butter to the flour mixture and use your hands to mix until some pea-sized and larger pieces form.
Step 5 -In a small bowl, add the egg and the buttermilk and whisk to combine.
Step 6 -Make a well in the center of the flour mixture, then pour the egg mixture into it.
Step 7 -Starting from the center, use a wooden spoon to mix the dough until it is too stiff to stir.
Step 8 -Lightly dust a work surface with the extra all-purpose flour.
Step 9 -Turn the dough onto the work surface and use floured hands to form it into a ball.
Step 10 -Knead the dough ball until no streaks remain, about 30 seconds. Don't overwork it or the bread will be tough.
Step 11 -Transfer the dough to the prepared skillet and use a very sharp knife to score a 1/2-inch-deep "x" on top.
Step 12 -Bake the bread for 15 minutes.
Step 13 -Reduce the temperature to 400 degrees F and bake the bread until it is golden-brown and the bottom sounds hollow when tapped, about 30-35 minutes.
Step 14 -Let the bread cool in the skillet, about 5-10 minutes.
Step 15 -Transfer the bread to a wire rack.
Step 16 -Slice and serve.
