Granted, this creamy, cheesy rice and veggie dish is pretty simple to make. You essentially mix it all together, drop it in the oven, and bam! Ingredients
- 2 1/2 cups basmati or long-grain rice, cooked
- 2 cups sharp cheddar cheese, shredded, divided
- 1 cup ricotta cheese
- 1 cup sour cream
- 2 cloves garlic, minced or finely chopped
- salt, to taste
- pepper, to taste
- 10 ounces frozen chopped spinach, thawed and drained
- 1 medium green bell pepper, chopped
- 4 scallions, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 2-quart casserole.
Step 3 -In a large mixing bowl, add the rice, 3/4 of the cheddar, the ricotta, the sour cream, and the garlic and stir to combine.
Step 4 -Season the rice mixture with the salt and the pepper and mix until well-blended.
Step 5 -Add the spinach, the bell pepper, and the scallions to the rice mixture and mix well.
Step 6 -Pour the casserole mixture into the prepared casserole dish and evenly sprinkle with the remaining cheese.
Step 7 -Bake the casserole until it is golden, about 30 minutes.
Step 8 -Let the casserole rest for 5 minutes.
Step 9 -Serve.
