Ingredients

  • For the vegan chickpea salad:
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup Italian parsley, chopped
  • 1/4 cup dill, chopped
  • 2 tablespoons whole-grain mustard
  • 1-2 tablespoons vegan mayonnaise, homemade or storebought, can substitute regular mayonnaise or 2-3 teaspoons olive oil
  • salt, to taste
  • pepper, to taste
  • For the sandwiches:
  • 1 tablespoon whole-grain mustard
  • 2 bagels, halved, can substitute 4 slices whole-grain bread or sub wraps
  • 2 large lettuce leaves
  • 1 Turkish cucumber, thinly sliced
  • 1 carrot, thinly sliced
  • 4 radishes, thinly sliced
  • 1 avocado, sliced
  • sprouts, such as alfalfa, sunflower, or daikon, to taste

Directions

Step 1 -Place the chickpeas, the parsley, the dill, 2 tablespoons of the mustard, the mayonnaise, the salt, and the pepper in a medium bowl.

Step 2 -Mash the chickpea mixture with a fork until well-combined

Step 3 -Taste the chickpea mixture for seasoning and adjust with the salt and the pepper accordingly.

Step 4 -Spread the remaining mustard on the bagel halves.

Step 5 -Top 2 of the bagel halves with the lettuce and a generous amount of the chickpea salad.

Step 6 -Layer the cucumber, the carrot, the radishes, and the avocado onto the sandwiches.

Step 7 -Top each sandwich with the sprouts and the remaining bagel halves.

Step 8 -Cut the sandwiches in half and serve.
