Ingredients
- 1 (14.1-ounce, 2-count) box refrigerated pie crust, 1 crust reserved for another use
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 (3-ounce) package strawberry gelatin
- 4 cups fresh strawberries, sliced
- whipped cream, optional, to taste, for topping
Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Unroll the pie crust into a 9-inch pie plate, trimming the edges.
Step 3 -Line the crust with a double layer of heavy-duty foil.
Step 4 -Bake the crust for about 8 minutes.
Step 5 -Remove the foil and bake until lightly golden-brown, about 5 minutes.
Step 6 -Transfer the crust to a wire rack to cool, for about 20 minutes.
Step 7 -In a small saucepan, combine the sugar, the cornstarch, and the water until smooth.
Step 8 -Bring the sugar mixture to a boil, cooking and stirring until thickened, about 2 minutes.
Step 9 -Remove the saucepan from the heat.
Step 10 -Stir in the gelatin until dissolved.
Step 11 -Refrigerate until the gelatin mixture is slightly cooled, about 15-20 minutes.
Step 12 -Arrange the strawberries in the cooled crust.
Step 13 -Pour the gelatin mixture over the strawberries.
Step 14 -Refrigerate the pie until set, about 20 minutes.
Step 15 -Serve with the whipped cream.
