Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips, and onions
  • 2 cups leftover cheeses, such as Brie, parmesan, and/or Gruyère, cut into pieces
  • 1/4 pound Black Forest ham or Canadian bacon, chopped
  • 1/2 cup scallions, chopped
  • 12 eggs, room temperature
  • 2 cups milk, room temperature
  • 1 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper flakes

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 9x13-inch baking dish with the olive oil.

Step 3 -Spread the roasted vegetables in the bottom of the prepared baking dish and top with a layer of the leftover cheese, the ham, and the scallions.

Step 4 -In a medium bowl, whisk the eggs, the milk, the salt, and the red pepper flakes together.

Step 5 -Pour the egg mixture over the ham mixture.

Step 6 -Bake the casserole until it is lightly golden and the eggs are set, about 50 minutes.

Step 7 -Let the casserole set for 5 minutes.

Step 8 -Slice and serve.
