Ingredients
- 1 pound sweet potatoes, cut into 3/4-inch-thick wedges
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- 1 teaspoon Old Bay® seasoning
- cilantro, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the grill to medium-high heat, about 375-450 degrees F.
Step 2 -Fill a grill-proof pot with water, place it on the grill, and allow it to heat until it is boiling.
Step 3 -Add the sweet potatoes to the boiling water and cook them until they can just be pierced with a paring knife, but they still feel firm and hold their shape, about 5 minutes.
Step 4 -Drain the sweet potatoes in a colander and allow them to cool slightly.
Step 5 -In a bowl, add the sweet potatoes, the olive oil, the salt, and the Old Bay seasoning and toss gently to combine.
Step 6 -Place the sweet potato wedges directly on the grill grates and cook, flipping them once, until char marks form, about 3-5 minutes per side.
Step 7 -Serve the sweet potatoes garnished with the cilantro.
