Ingredients
- 2 cups vital wheat gluten
- 1/3 cup nutritional yeast flakes
- 1 teaspoon garlic powder
- 1 tablespoon onion powder
- 1/2 teaspoon dried sage
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- 1 teaspoon smoked paprika
- salt, to taste
- pepper, to taste
- 3/4 cup cooked beans
- 2 cloves garlic
- 3 tablespoons soy sauce, plus more to taste
- 1/2 teaspoon liquid smoke
- 1 1/2 cups vegetable broth, plus more if needed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large mixing bowl, combine the wheat gluten, yeast flakes, garlic powder, onion powder, sage, rosemary, thyme, smoked paprika, salt, and pepper thoroughly. Set aside.
Step 3 -In a blender or food processor, add the beans, garlic cloves, soy sauce, veggie broth, and liquid smoke and blend well.
Step 4 -Add the blended bean mixture to the dry ingredient mixture and stir to combine.
Step 5 -Once well combined, begin kneading the mixture for 3 minutes, adding splashes of veggie broth if it feels too dry. You want it to be thoroughly combined but not kneaded for too long, as the longer it is kneaded the chewier the final product will be.
Step 6 -Form the dough into a roast-shaped log, about 10x5 inches.
Step 7 -Place the dough log onto parchment paper and roll it up tightly, tucking in both ends. This helps it retain its shape as it cooks.
Step 8 -Wrap the parchment-paper-covered log tightly in foil. This helps maintain its moisture.
Step 9 -Place the vegan roast on a baking sheet and bake for 1 hour. Flip it every 20 minutes to ensure all sides cook evenly.
Step 10 -Remove it from the oven and let it cool for about 15 minutes before slicing in.
Step 11 -Serve warm!
