Ingredients
- 1 large egg
- 1/4 cup mayonnaise
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1 teaspoon fresh lemon juice, plus more, to taste, for serving
- 1/8 teaspoon salt
- 1 pound fresh lump crab meat
- 2/3 cup saltine cracker crumbs
- 2 tablespoons butter, melted
Directions
Step 1 -In a large bowl, add the egg, the mayonnaise, the parsley, the Dijon mustard, the Worcestershire sauce, the Old Bay seasoning, 1 teaspoon of the lemon juice, and the salt and whisk to combine.
Step 2 -Add the crab meat to the egg mixture and top with the cracker crumbs. Use a rubber spatula to very gently fold them together, trying to avoid breaking up the crab meat.
Step 3 -Cover the bowl tightly and place it in the refrigerator to chill, for at least 30 minutes and up to 24 hours.
Step 4 -Preheat the oven to 450 degrees F.
Step 5 -Generously grease an 18x26-inch rimmed baking sheet with nonstick spray or line it with a silicone baking mat.
Step 6 -Use a 1/2-cup measuring cup to portion the crab cake mixture into 6 mounds and place them on the prepared baking sheet.
Step 7 -Use your hands to compact each of the crab cakes into mounds, eliminating any lumps, cracks, or splits. Avoid flattening them.
Step 8 -Use a pastry brush to coat the tops of the crab cakes with the butter.
Step 9 -Bake the crab cakes until they are lightly browned on top and around the edges, about 12–14 minutes.
Step 10 -Drizzle the crab cakes with the extra lemon juice.
Step 11 -Serve warm.
