There's nothing like family and great childhood memories. And after one particular visit to grandma's, we will always remember our Cousin's Favorite Coconut Cookies. He got so excited the minute the smell of coconut started swirling around the kitchen, while we all simultaneously watched and waited for those moist, sweet cookies to turn golden-brown. Everyone has a favorite, but ours will always be our Cousin's Favorite Coconut Cookies. Such sweet memories they bring! They will soon be your favorite, too!

Ingredients
- 1 cup shortening
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour, plus more, to taste, for dusting a work surface
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
- 1 cup sweetened shredded coconut
Directions
Step 1 -In a large bowl, add the shortening, the granulated sugar, and the brown sugar and use an electric hand mixer to beat until it is combined.
Step 2 -Add the eggs and the vanilla extract to the sugar mixture and beat until it is combined.
Step 3 -In a medium bowl, add 2 cups of the flour, the baking powder, the baking soda, and the salt and whisk to combine.
Step 4 -Gradually add the flour mixture to the sugar mixture and beat to combine.
Step 5 -Add the oats and the coconut to the dough and stir to combine.
Step 6 -Evenly divide the dough into 4 portions.
Step 7 -Use the extra flour to lightly dust a work surface. Add the dough portions and shape each of them into 6-inch-long logs.
Step 8 -Wrap the dough logs in wax paper and place them in the freezer until they are firm, about 2 hours.
Step 9 -Preheat the oven to 350 degrees F.
Step 10 -Transfer the dough logs to a flat surface and unwrap them. Cut them crosswise into 1/2-inch-thick slices and reshape them, as needed.
Step 11 -On one or two ungreased baking sheets, add the dough slices about 2 inches apart and bake until the cookies are golden-brown, about 10-12 minutes.
Step 12 -Transfer the baking sheets to wire racks and let the cookies cool, about 5 minutes.
Step 13 -Transfer the cookies to the wire rack and let them cool completely.
Step 14 -Serve.
