Ingredients
- For the salad:
- 8 ounces salmon, cooked and flaked
- 3 cups cucumber, chopped
- 3 cups red bell peppers, chopped
- 3/4 cup red onions, chopped
- 1 medium avocado, chopped
- 4 cups lettuce, chopped
- For the dressing and garnish:
- 1 1/2 tablespoons lemon juice, freshly squeezed
- salt, to taste
- fresh ground black pepper, to taste
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh parsley, chopped
Directions
Step 1 -In a large salad bowl, add the salmon, cucumber, red bell peppers, red onions, avocado, and lettuce, mixing everything until combined.
Step 2 -In a mason jar, pour the lemon juice.
Step 3 -Add the salt and pepper.
Step 4 -While whisking, slowly pour in the olive oil.
Step 5 -Taste the dressing for seasoning and drizzle it over the salad.
Step 6 -Garnish with parsley and serve.
