Betty is such a funny lady. She'll talk your ear off, but she also always finds a way to feed you. When our family is in town, she insists that she cooks up her Betty's Beef Loaf for them, and we love it when that happens. Her recipe makes the juiciest loaf we've ever tasted, and we think it's the blend of meats she uses that makes all the difference. She also smothers it with ketchup, which adds the extra pizzaz it needs. We're so thankful for her and her Betty's Beef Loaf! Now, we're gonna go invite our family over so we can taste it again!

Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 4 cloves garlic, minced
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon dried thyme
- 1 heaping teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons Worcestershire sauce
- 2 1/2 pounds meatloaf meat mix, can substitute 1 1/4 pounds ground beef mixed with 1 1/4 pounds pork
- 3/4 cup plain breadcrumbs
- 3/4 cup ketchup
Directions
Step 1 -Set an oven rack in the middle position.
Step 2 -Preheat the oven to 350 degrees F.
Step 3 -Line a 13x18-inch baking sheet with parchment paper or heavy-duty nonstick foil.
Step 4 -In a medium skillet over medium heat, heat the oil.
Step 5 -Add the onion to the oil and cook, stirring frequently, until it has softened, about 5 minutes.
Step 6 -Add the garlic to the onion and cook until fragrant, about 1 minute. Be sure not to brown it.
Step 7 -Transfer the onion mixture to a large bowl.
Step 8 -In another bowl, add the eggs, the milk, the thyme, the salt, the pepper, and the Worcestershire sauce and whisk to combine.
Step 9 -Add the meat and the breadcrumbs to the egg mixture and use your hands to mix until just combined.
Step 10 -Place the meat mixture on the prepared baking sheet and form it into a 12x5-inch loaf.
Step 11 -Evenly spread the ketchup over the top and down the sides of the loaf.
Step 12 -Bake the meatloaf until the middle reaches an internal temperature of 160 degrees F.
Step 13 -Let the meatloaf rest for 10 minutes.
Step 14 -Scrape the fat away from the meatloaf.
Step 15 -Slice the meatloaf and serve.
