It's like banana pudding, bread pudding, and fruit cobbler all collaborated on a dessert that offers up the best of themselves! It features the creaminess and subtle, but tropical, flavor of a banana pudding, the tender texture and sweetness of a bread pudding, and the crunchy, nutty topping of a cobbler, all in one dish! Ingredients
- For the cobbler:
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- 1/2 cup butter, melted
- 4 medium-size ripe bananas, sliced
- For the streusel topping:
- 3/4 cup light brown sugar, firmly packed
- 1/2 cup self-rising flour
- 1/2 cup butter, softened
- 1 cup old-fashioned oats
- 1/2 cup pecans, chopped
- vanilla ice cream, to taste, for serving
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Lightly grease a 7x11-inch baking dish.
Step 3 -In a bowl, add 1 cup of the flour, the sugar, and the milk and whisk just until blended.
Step 4 -Whisk in the melted butter.
Step 5 -Pour the batter into the prepared baking dish.
Step 6 -Top the batter with the banana slices.
Step 7 -In another bowl, add the brown sugar, the remaining flour, and the remaining 1/2 cup of the softened butter and stir with a fork until crumbly.
Step 8 -Add the oats and the chopped pecans to the brown sugar mixture and stir to combine.
Step 9 -Sprinkle the banana layer with the streusel topping.
Step 10 -Bake until golden-brown and bubbly, about 40-45 minutes.
Step 11 -Serve the cobbler with the ice cream.
