This Beefy Rice Casserole is a family-friendly, big-group-loving dish that you will look forward to each and every time! Perfectly seasoned and crumbled ground beef, healthy spinach, tender rice, and your choice of crunchy veggies, all combined with a delicious sauce, and topped with, you guessed it, melted mozzarella cheese... well, it's just about the best combo we can think of. Beefy Rice Casserole is that baking dish full of love that everyone looks forward to. So, go ahead and put it in your weekly meal rotation for those hectic nights, or for when you gather with your potluck friends. Believe us, everyone is going to love you for it!

Ingredients
- 1 pound lean ground beef
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 can mushrooms, drained and sliced
- 1/2 teaspoon oregano
- 1 (10-ounce) package frozen spinach, squeezed dry and chopped
- 1 cup instant rice
- 1 1/4 cups water
- 1 (10.5-ounce) can condensed cream of celery soup
- 1/3 cup sour cream
- salt, to taste
- black pepper, to taste
- 1/2 cup frozen vegetables of your choice
- 1 cup mozzarella cheese, shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a large skillet over medium-high heat, add the ground beef, the onion, and the garlic and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
Step 3 -In a large bowl, add the beef mixture, the mushrooms, the oregano, the spinach, the rice, the water, the cream of celery soup, the sour cream, the salt, the black pepper, and the frozen vegetables and stir to combine.
Step 4 -Transfer the beef mixture to a 9x13-inch baking dish, cover with aluminum foil, and bake until the rice is tender, about 40-45 minutes.
Step 5 -Transfer the casserole to a wire rack and turn the oven on the broil setting.
Step 6 -Sprinkle the mozzarella cheese over the top of the casserole, then broil until golden-brown, about 3 minutes.
Step 7 -Serve.
