Ingredients
- 36 chocolate sandwich cookies, vanilla-cream-filled
- 2 sticks butter, divided
- 2/3 cup brown sugar, packed
- 1 1/4 cups heavy whipping cream, divided
- 1 (12-ounce) bag dark chocolate chips
Directions
Step 1 -In a food processor or blender, add the cookies and process until they are finely crushed.
Step 2 -In a small pan over medium heat, melt 1 stick of the butter.
Step 3 -Add the melted butter to the cookie crumbs and stir to combine.
Step 4 -Add the cookie crumb mixture to an ungreased 10-inch pie plate and evenly press it into the bottom and up the sides of it.
Step 5 -Place the pie plate in the freezer and let the crust set, about 10 minutes.
Step 6 -In the same pan, add the remaining butter and the brown sugar and cook, whisking constantly, until it is bubbly, about 2 minutes.
Step 7 -Transfer the pan to a wire rack and slowly add 1/4 cup of the heavy whipping cream to the butter-brown sugar mixture. Whisk until it is smooth.
Step 8 -Let the caramel mixture cool, about 15 minutes.
Step 9 -Pour the caramel mixture over the chilled crust.
Step 10 -Place the pie in the freezer and let it chill just until it is set, about 30-45 minutes. Do not fully freeze.
Step 11 -In a heat-safe medium bowl, add the dark chocolate chips.
Step 12 -In a medium saucepan over medium-high heat, add the remaining heavy whipping cream and bring to a simmer.
Step 13 -Add the simmered cream to the dark chocolate chips and let it sit, about 5 minutes.
Step 14 -Whisk the chocolate mixture until it is completely smooth.
Step 15 -Transfer the pie from the freezer and pour the chocolate mixture over the caramel layer.
Step 16 -Place the pie in the freezer and let it chill until it is just set, about 30 minutes.
Step 17 -Slice and serve.
