Ingredients
- For the salmon:
- 2 salmon fillets, skin removed, cut into bite-size chunks
- olive oil, to taste
- spicy seasoning, such as Tajín® or Cajun seasoning, to taste
- For the sauce:
- mayonnaise, to taste
- sriracha, to taste
- sweet chili sauce, to taste
- rice vinegar, to taste
- chives, to taste, chopped, for garnish
Directions
Step 1 -Turn the oven on to the broil setting.
Step 2 -Line a baking sheet with foil.
Step 3 -In a large bowl, add the salmon chunks, the olive oil, and the spicy seasoning and mix well.
Step 4 -Place the coated salmon chunks on the prepared baking sheet and broil until they are crispy, about 8 minutes.
Step 5 -While the salmon is in the oven, in a bowl, add equal parts of the mayonnaise, the sriracha, and the sweet chili sauce and mix to combine.
Step 6 -Add the rice vinegar to the sauce mixture and mix well.
Step 7 -Serve the salmon bites drizzled with the sauce and sprinkled with the chives.
